Whipped Coffee Cocktail

Spiked viral Dalgona coffee gets a grownup, boozy upgrade for drinking after 5 pm, or 5 pm somewhere. My whipped coffee is sugarfree and lectin free. Make it!

Lectin Free Gourmet Whipped Coffee Cocktail

Dalgona coffee consists of instant coffee, sugar, and water whipped into a fluffy mousse. It's the reverse of classic barista drinks as the coffee sits on top of the milk. This viral coffee, often dubbed the quarantine coffee, originated in Korea and stormed onto the social media scene in early 2020 as people craved their fancy coffee drinks at home.

No doubt, this is a fun way to have your coffee. But if you want to make it REALLY FUN, add whiskey!

My LFG riff on the viral coffee is really special. I use coconut milk, and xylitol, and caramel stevia for the sweetness, but granular erythritol or monk fruit sweeteners will work, too.

For the instant coffee, any "good coffee" will do. But because this is the "quarantine coffee" I like the added immune-system fortifiers of Lion's Mane and Chaga mushrooms in Four Sigmatic instant mushroom coffee. Plus, the coffee comes in perfectly measured one tablespoon packets, so there's no measuring. If you'd like to try Four Sigmatic, at least get a discount! Warning, this drink goes down easy, so pace yourself!

The Recipe

LFG Whipped Coffee Cocktail

1 Packet Four Sigmatic Instant Mushroom Coffee (1 Tbsp.)

1 T Xylitol or Erythritol

7 Drops Caramel Stevia Leaf Extract

1 T Boiling Water

1/2 Cup Crushed Ice

1 oz Coconut Milk

1 oz Whiskey

Step 1: Whip Coffee

In a deep measuring glass, whip coffee, sweeteners, and boiling water together. I used a hand mixer with wire whisk attachments. It takes only a minute or so to achieve fluffy mousse with soft peaks. If you whip by hand, it takes longer.

Step 2: Shake the Booze

In a cocktail shaker, add ice, coconut milk, and whiskey. Shake 15 times vigorously. The more you shake the weaker the booze. So don't overdo it ; ) Or if you're a true whiskey connoisseur, dont' listen to Bond, James Bond. Stir it, don't shake it!

Step 3: Assemble the Cocktail

Choose a pretty martini glass, because we're serving this drink UP! Pour the shaken (or stirred) drink into the glass. Spoon the whipped coffee on top. To create dramatic peaks like the photo, touch the whipped coffee wtih the spoon and pulle the spoon up and away slowly. Repeat until you have the desired effect.

Sip, Think, and ENJOY!
