Crunchy, salty, and ranchy! Everything a game day snack should be, only without the lectins. SUPER EASY recipe yields a big bowl of chips and dip to serve the fans.
On game day I used to serve a bowl of Wavy Lays (I know) and a side of Hidden Valley Ranch dip. I thought I was doing everyone a favor by making my dip with Greek yogurt because it was "healthier". Boy those were the days. And I don't mean good days.
The HVR dip mix has sugar adn mono sodium glutimate. Oh my MSG! Quit eating that already! Ranch dip is easy to make at home from scratch with very compliant, lectin free ingredients.
And potato chips? Well forget that old red bag. That's filled with bad fat and lectins. Instead, make your own compliant chips with a delicious tuber, pure olive oil and salt and pepper. So bubbly and crispy, you'll never want those ordinary potato again.
You'll need a deep fryer filled with pure olive oil. Let's make this!
The Recipe
LFG Sweet Potato Chips
2 Medium Sweet Potatoes (one orange, one white)
1 t Salt
LFG Ranch Dip
1 C Plain Compliant Yogurt (your choice)
1/2 t Garlic Powder
1 T Fresh Chives chopped
1/2 t Fresh Onions finely minced
1/2 t Dried Parsley
1/4 t Erythritol Granules
1/4 t Salt
Instructions:
Step 1: Make the Dip
In a medium bowl add all the dip ingredients well. Whisk until creamy. It will be a little chunky due to the fresh ingredients. That's good! Refrigerate at least 2 hours before serving.
Step 2: Slice the Sweet Potato
Preheat deep fryer to 300 degrees. With a mandolin slicer on thin setting, slice both sweet potatoes.
Step 3: Deep Fry the Chips
In batch sizes that suit your fryer, deep fry the chips for about five minutes or until bubbly and light golden brown. Drain onto a paper towel line holding plate. Repeat with another batch until all the chips are fried. Sprinkle the chips with salt and pepper.
Enjoy with a Manhattan up with a cherry! It's game day!
