Smoked salmon toast is so easy to make. We used wild caught smoked salmon and organic cream cheese. Assembled with all the fixings including capers, red onions, dill and olive oil, this dish makes the perfect brunch, snack or even a light summer meal with no cooking required. I know what you’re thinking. But, Kristine, we don’t have sourdough! No problem! If you’re in the United States I can ship you my easy sourdough mix. Just add water! Another option for this dish is “real” sourdough from a local bread artisan. What separates real sourdough from the bread labeled “sourdough” in the supermarket is fermentation time. Supermarket sourdough is not true sourdough because it is fast fermented with yeast.
The reason Dr Gundry approves artisan sourdough bread is because of the low sugar. Glucose levels measured after eating supermarket sourdough bread are spiked. But real artisan sourdough is risen for 24 hours or longer with lactobacilli culture. After eating artisan sourdough bread, glucose levels do not spike. During the lacto-fermentation, most of the sugar (starch) in the flour is consumed for you. Real sourdough still has gluten, but the chains are weakened the longer the bread ferments in the rise.
Now, one word about cream cheese. ORGANIC! While most cream cheese found in stores is made from cows with the a1casein, Dr Gundry approves high fat dairy like cream cheese, heavy cream and certain cheeses. Just buy organic and grassfed when at all possible.
Finally, let’s talk about salmon. Salmon is rich in omega-3 fatty acids. Omega-3s are great for heart health, and are found in foods like sardines, salmon and flax seeds. EAT MORE OMEGA-3s! When buying smoked salmon, just be sure to choose wild-caught with no added dyes.

The Recipe
LFG Salmon Toast Points
2 Slices Sourdough Bread
3 oz Smoked Salmon
2 Tablespoons Organic Cream Cheese
2 Tablespoons Capers
1 Slice Red Onion
Sea Salt
Dill
Olive Oil
Step 1: Toast the sourdough
Toast the bread and drizzled with olive oil. I prefer to pan toast my sourdough for a more even browning. But an electric toaster or toaster oven both work fine too. Place toast points on a plate.
Step 2: Assemble toasts
Smear cream cheese evenly onto the toast points. Next, layer smoked salmon, capers, and red onion. Sprinkle with sea salt and dill to taste. And, of course, drizzle olive oil for the finishing touch.
