Salted Rosemary Pecans

Salty nuts with savory herbs and olive oil are pan roasted to perfection. Make them!

Roasted rosemary pecans are salty and herby with a delicate crunch, perfect as a bar nut with cocktails or mocktails, a salad topper, a light appetizer, or a wholesome snack. Here’s an easy, five-ingredient recipe that will keep you healthy and satisfied.

Salt, pepper, olive oil, rosemary and pecans are all you’ll need to make this healthy snack. Try them alone, add them to salads, or keep them in a bowl by the bar for guests. This munch-worthy treat is much healthier than store-bought nuts because they have all the right stuff: the right oil, the right salt, the right lectin free nuts and a gorgeous herb flavor profile most commercial nuts fail to deliver to your taste buds.

Why pecans? These little brown babies have built-in benefits. With magnesium, calcium, fiber, vitamin E, and zinc, pecans possess wonderful anti-inflammatory properties. And with a good amount of vitamins A and E, and zinc, pecans help support your immune system.

Pecans contain more fiber and protein combined than carbs, so they won’t spike your blood sugar. They also taste rich and decadent in both savory and sweet dishes. So, when choosing a healthy nut, reach for pecans.

Now, let’s make this VERY EASY dish.

LFG Salted Rosemary Pecans

The Recipe

3 tablespoons Olive Oil

1 cup Pecan Halves

1/2 teaspoon Sea Salt

1/2 teaspoon Cracked Pepper

1 teaspoon Fresh Rosemary (chopped)

Step 1: Pan roast the nuts

Set a cast-iron, enameled skillet (I like Le Creuset) on a medium high burner and allow pan to heat. Test the pan with a sprinkle of water. When the water beads up, dances on the pan, and then evaporates, the pan is hot enough. Into the hot skillet, add olive oil. Let heat for about 10-20 seconds. Then, add nuts. Toss in hot oil to roast for about 2-3 minutes until browned and all oil is absorbed by the nuts.

Step 2: Season roasted nuts

To the roasted pecans add sea salt, cracked pepper, and rosemary. Toss until seasoning is evenly distributed and nuts are well-coated.

ENJOY!
