This prebiotic spice cake an easy treat that's made in a mug and utilizes the fibers in the Gundry MD supplement as the flour. Prebiotic fibers like acacia fiber, inulin, and oligosaccharidges help your gut flora thrive. All that aside, the cake is also very flavorful, moist and airy.
We're going to use a combination of cinnamon, ginger, and clove for the spice cake. Did you know, gram for gram CLOVES have the highest concentration of polyphenols of any food?
To get a bit scientific here, polyphenols are what's known as secondary metabolites, which means they are organic compounds produced by bacteria, fungi, or plants which are not directly involved in the normal growth, development, or reproduction of the organism. Polyphenols play another necessary role in the plant's well-being. They defend their plants against ultraviolet radiation or aggression by pathogens. In the last decade, there has been a lot of focus on the health benefits of dietary plant polyphenols as antioxidants.
Epidemiological studies and associated meta-analyses strongly suggest that long term consumption of diets rich in plant polyphenols offer protection against development of cancers, cardiovascular diseases, diabetes, osteoporosis and neurodegenerative diseases like Parkinson's and Alzheimer's for example. That said, I've been sprinkling ground cloves on my baked sweet potatoes, coffee, and making lots of these prebiotic spice cakes.

The Recipe
LFG Prebiotic Spice Cake
1 Scoop Gundry MD PrebioThrive
1 T Vanilla Grassfed Collagen
1 T Olive Oil or Ghee
1 Pastured Egg
1 T Erythritol Granules
1/4 t Baking Soda
1 Tiny Pinch Salt
1/4 t Ground Cinnamon
1/4 t Ground Ginger
1/4 t Ground Clove
Instructions
Step 1: Mix Ingredients
In a large mug, whisk all cake ingredients until very smooth.
Step 2: Microwave the Cake
Pop the batter-filled mug in the microwave for 80 seconds.
Top with a dollop of organic heavy whipped cream and another shake of ground cloves. Absolutely delicious and nutritious! ENJOY!
I live at 6,000’ above sea level. I cooked it for an extra 10 seconds, but the cake rose beautifully, and then fell. It was too moist, and tasted soapy from the baking soda. I will write back once I figure out the necessary high altitude adjustments, but my first attempt at revision will be with the addition of a half teaspoon of cream of tartar, in order to mimic baking powder rather than soda. Was I supposed to level or round the scoop of Pre-Biothrive? I had assumed it was to be level.
