The Recipe
LFG Prebiotic Chocolate Chip Cookies
2 Scoops PrebioThrive (get it here with my discount)
1 T Cassava Flour
2 T non-GMO Allulose Granules
1/4 t Baking Soda
1/8 t Salt
1 Pastured Egg
2 T French Butter (melted)
1 T Tahini
1/2 t Vanilla Paste or Extract
1/4 C 85% Cacao Chocolate Chips
Trader Joe's 72% Cacao Belgian Dark Chocolate Bar (broken into chunks)
(makes 8 cookies)
Instructions:
Step 1: Mix Ingredients
Preheat oven to 350F. In a small bowl, mix PrebioThrive, flour, sweetener, baking soda, salt, egg, melted butter, tahini, and vanilla together until very smooth. Add chocolate chips and stir. Spoon one tablespoon dollops onto a parchment lined baking sheet. Set broken pieces of chocolate bar on top of the cookie batter dollops.
Step 2: Bake
Bake cookies for approximately 10 minutes, or until golden brown around the edges. Allow to cool 5 minutes on the cookie sheet, then transfer to a cooling rack and allow to cool 5 more minutes before eating.
Double this recipe to treat your whole family. DELICIOUS!
I misread the recipe and used 2T tahini. It took an extra minute for the cookies’ edges to brown. Once cooled, they had a moist, cakey texture. I will make this recipe again!
