Moose Munch

Harry & David's Moose Munch is one of those addictive snacks that you can't put down. You take the first bite, then another, and another, and suddenly the crunchy, chewy, sweet, salty, nutty, caramely, chocolatey goodness is gone. And what's worse is you just ate a bunch of sugar and lectins. We're going to fix that. The snack still won't last more than five minutes, but at least you won't have a gut full of indigestible proteins and sugar. Popcorn is a big no-no if you're living a lectin free lifestyle. Almost all commercially grown corn is genetically modified and full of pesticides. And the lectins in corn can cause some serious inflammation in our bodies. But you can still enjoy a popcorn-like treat if you use popped sorghum. Actually, popped sorghum tastes exactly like popcorn without all the bad stuff.


You can make your own popped sorghum using a special popping sorghum available in some health food stores or online. Or you can get sorghum already popped from my favorite supplier, Nature Nate's. Once you have your popped sorghum, you can proceed with the recipe. Gather the other ingredients. I like hazelnuts for this recipe, but macadamia nuts and pecans are also very good. Use nuts you have on hand.


For the chocolate, I use Trader Joe's 72% cacao Belgian Dark Chocolate bar. It's super smooth and melts wonderfully. It gives this moose munch the Harry & David gourmet touch.


Finally, you'll need to make LFG caramel sauce, too. Don't worry, it's really easy. Just follow the recipe below. You'll find the sauce is great for marking the foam on an Lectin Free Gourmet caramel macchiato coffee drink, too.


Okay, let's get started making this quick and easy LFG moose munch.


 

The Recipe


LFG Moose Munch

2 Cups Popped Sorghum

LFG Caramel Sauce*

1/4 Cup Hazelnuts

1/4 tsp Salt

2 Ounces 72% Cacao Dark Chocolate


*LFG Caramel Sauce

5 T Heavy Cream from Pastured Grassfed Cows

1 T French Butter

1 T IMO or Yacon Syrup

1 T Swerve Granules

1 t Raw Local Honey

1/2 tsp Vanilla


Step 1: Make the Caramel Sauce

In a medium saucepan, add butter, IMO or Yacon syrup, Swerve and honey. Cook over medium low heat, stirring frequently, until the mixture is comes to a slow boil. Slowly add half the cream and continue simmering until the mixture turns a light caramel color. This takes about 5 minutes. Remove from heat and whisk in the remaining cream. Stir in vanilla. Set aside.


Step 2: Coat Popped Sorghum and with Caramel

In a medium bowl add 2 cups popped sorghum. Drizzle caramel sauce into the bowl and stir to coat the popped sorghum well with caramel.


Step 3: Add Salt and Nuts

Into the bowl, add nuts and salt. Stir well. Transfer mixture onto a plate.


Step 3. Drizzle With Melted Chocolate

In a small bowl, melt chocolate in the microwave for 30 seconds or until the chocolate is all shiny. Stir the chocolate until smooth, then drizzle melted chocolate over the caramel coated sorghum mixture. Let cool until chocolate is set.
