Our bodies need salt to maintain a balance of body fluids and keep muscles and nerves running smoothly. And, believe it or not, salt is an essential electrolyte that when added to distilled water keeps our bodies perfectly hydrated after a sweaty workout. Yes, we lose salt and need to replace it after we sweat. Makes sense right?
So, don't underestimate the power of salt. It makes your body run smoothly and it makes salad dressings taste amazing.
Often I'm in a hurry or just exhausted after a long day at the Lectin Free Gourmet kitchen fulfilling orders. So a simple salad is all I want. I like a bed of greens, radishes, carrots and red onion. Tossed in this dressing with a little Parmigianno-Reggiano and it's a meal.

The Recipe
LFG Italian Vinaigrette
3 Tbsp Olive Oil
1 Tbsp Lemon Juice
1 Tbsp Apple Cider Vinegar
1/2 tsp Italian Herbs
1/2 tsp Minced Garlic
1/8 tsp Salt
1/8 tsp Pepper
Step 1: whisk ingredients
Into a medium bowl, whisk all ingredients together until emulsified. Double or triple the recipe and store in a jar in the fridge for up to two weeks.
