Lectin Free Sunrise Skillet

This hearty breakfast scramble with fresh Omega-3 eggs, spinach, mushrooms, carrots, green onion and grassfed feta cheese is a great way to start the day.

Hey, it's breakfast! It should be a meaningful meal and a healthy meal — the meal that sets the precedence for your day. This stick-to-your-ribs egg skillet is full of protein, vitamins and minerals to kick start your morning. So go big and fill your skillet with this hearty combination of eggs and low-lectin veggies.


Lectin Free Gourmet Sunrise Skillet Recipe


3 Eggs

1 T Butter

1 C Raw Spinach

1/4 C White Mushrooms

1/8 C Carrots Julienne

1 Green Onion

1 T Grassfed Feta Crumbles

Sea or Kosher Salt to taste


Instructions


Wash and prepare you veggies. Slice green onion and mushrooms, julienne carrots, separate spinach leaves from bunch. Melt butter in a large skillet on medium heat. Add sliced green onions, mushrooms and carrots and saute for one minute. Salt to taste and move to one side of pan. Crack eggs into the other side of pan and scramble with a rubber spatula for about one minute. Fold scrambled eggs over and turn off heat. Add spinach. Cover and let sit for one minute until spinach is bright green and slightly wilted. Add a tiny bit more salt to eggs and spinach. Put it all on a plate and top with feta cheese and cilantro garnish.


Pairs great with a cup of coffee or lavender latte.
