Green Mango Lassi

Lectin Free Gourmet Green Mango Lassi

The sweet and spiced mango smoothie originating in India has made its way to our hearts. With its creamy, fruity goodness, how could it not? It's delicious.


But how to make it Plant Paradox compliant? GREEN MANGO of course! The tartness from the unripe mango makes the drink even better than the original.


And I use IMO syrup, a prebiotic sweetener made from the cassava plant, to get some of that sweetness back in. IMO looks like corn syrup, but it's way better for you. I like Fiber Yum brand and get it on Amazon. You can buy a huge 2.5 pound jug for a great price at the link below.

In addition to IMO syrup, I have another secret ingredient. If you've used ripe mango before, then you know it's a lot more yellow than the Plant Paradox compliant green mango, so we are also going to bring the yellow color back by adding a little turmeric. Hey, that's a huge WIN as turmeric is the wonder spice with 10 proven health benefits including anti-inflammatory and antioxidant medicinal properties. And that signature spice this drink is known for is cardamom. You could also swap for cinnamon if you prefer or don't have cardamom in your spice rack.


And let's talk about the yogurt. Most recipes call for plain Greek yogurt. But we all know, that's not on the menu for Plant Paradox peeps. I used Cocoyo pure coconut yogurt. It has billions of tiny good bacteria that give it an effervescence unlike any other yogurt I've tried. I find it at Natural Grocers, and it's delicious in this drink. I used the plain flavor, but the ginger turmeric would also be excellent.


Finally, we need to discuss blenders. They're not all created equal. I have a VitaMix. They're pricey, but very worth it. With they're turbo blend setting and super sharp blade, they put the smooth in smoothies, that's for sure. But I puree all sorts of things from soups to sauces, hot and cold. I'd say a good blender is a must if you're doing much of anything in the kitchen. Here's a link to the one I have, if you're interested.

The Recipe


LFG Green Mango Lassi

1 Green Mango (cubed)

1 T FiberYum IMO syrup

1/4 C Cocoyo Plain Yogurt

1/4 C Unsweetened Coconut Milk

1/2 C Ice

1/4 t Turmeric

1/4 t Cardamom

Mint for Garnish


Instructions:


Step 1: Blend

Blend all ingredients together until very smooth. I have a Vitamix and it does a great job. I find that if I start on the lowest setting and gradually increase to the highest setting, I get a perfectly smooth smoothie every time.


Step 2: Garnish

Pour into a glass and garnish with a fresh mint sprig.
