Baking with green bananas is a delight. Green bananas are made up of resistent starch and prebiotic fiber. So, this easy green banana blender cake is super great for keeping your gut bugs happy. This bouncy, moist cake is very tasty naked. Or whip up some simple, fluffy cream cheese frosting to make it fancy.
True green bananas haven't begun the ripening process yet. Because green bananas are the main ingredient in my LFG granola in my Foodie Box, I these fruits in 40-pound cases directly from the local produce wholesaler.
I realize not everyone can buy cases of fruit from a wholesaler. So just do the best you can to find the greenest bananas as the grocery store. Often they're in the back. Just ask your produce stocker. Green bananas should be dark green and extremely hard to peel.
Now here's the trick to baking with green bananas. You have to freeze them first. This helps preserve the resistent starch in them and also helps to soften them. So as soon as get your green bananas home, peel them and freeze the fruit. Buy a big bunch, or two, as you'll find frozen green bananas are quite nice to have handy for recipes like this one.

The Recipe
LFG Green Banana Layer Cake
3 Cups Green Bananas (frozen then thawed)
2 Large Pastured Eggs
1/2 Cup Coconut Milk
1/4 Cup Green Banana Flour
1/4 Cup IMO or Yacon Syrup
1/4 Cup Olive Oil
1 T Grassfed Collagen
1 t Baking Soda
1 t Aluminum Free Baking Powder
LFG Cream Cheese Frosting
8 oz Organic Cream Cheese (room temp)
1/2 Cup Cultured French Butter (room temp)
1/2 Cup Powdered Erythritol
1 t Vanilla Extract
1/2 Cup Walnuts (chopped)
Step 1: Blend Cake Ingredients
Preheat oven to 350 degrees F. Prepare the bottoms of two round cake pans with parchment. In a blender, add all the cake ingredients. Blend until very smooth.
Step 2: Bake the Cake
Pour the cake batter equally into your two prepared cake pans. Bake for 30 minutes. Cool completely before frosting.
Step 3: Make Frosting
In a large bowl, whip cream cheese and butter together with an electric hand mixer. Add powdered sweetener and vanilla extract. Whip until frosting is light and fluffy.
Step 4: Frost and Decorate Cake
Turn one of the cooled layers onto a cake plate. Frost the top. Then turn the other layer on top of the frosted layer. Frost the top and sides of the assembled cake. The press chopped walnuts into the frosted sides.
