Grassfed Patty Melt

Grilled patty with melted a2 cheese, caramelized onions on sourdough. Make it!

A good patty melt is worth its weight in gold. Imagine a juicy, salty grilled hamburger patty slathered in mayo and smothered in melted cheese and caramelized onions and served open-faced on tangy sourdough toast. It’s not a stretch to say we can enjoy a patty melt on the lectin free lifestyle. Read on to see how.


For a Lectin Free Gourmet patty melt, we start with grassfed and finished beef. Look for words like “100% grassfed” or “grassfed and finished” on the label. Most grocers will carry at least one option. I like the convenience of Simple Truth frozen patties. Their 100% grassfed beef patties are individually wrapped. Just take out what you need, thaw, season and grill.


Next, let’s talk about cheese. Any a2 cheese will do. Goat and sheep cheeses are great! There’s a small Amish farm in Pennsylvania called Miller’s Bio Farm. They raise nothing but a2 cows for their dairy products. And let me tell you, the cheese is second to none. I love their Colby cheese, but they also have cheddar and Swiss which are great on a patty melt. Here’s a link if you want to check out these fine cheeses.


Finally, there’s the little matter of bread. If you’re lectin free then you may think bread is a challenge. But I’m here to tell you, in fact, bread is easy. I have a couple of great sourdough mixes that give you excellent options for making patty melts. Choose either the pumpernickel or the sweet sorghum mix and you’ll have yourself a lovely loaf. As you can see from the photo, I used the darker pumpernickel for the base, and the lighter sorghum for the top. I’m pleased with this combo.

Finally, you’ll want to make some delicious fries to go with your patty melt. So use a nice tuber or root veggie and good oil for frying. I used a white sweet potato here and rice bran oil, which is on the Dr Gundry YES list. You could also fry in avocado oil or coconut oil for excellent tasting shoestring sweet potatoes. Do yourself a favor and get a mandolin slicer with a shoestring or julienne blade. It makes slicing sweet potatoes a snap.

LFG Patty Melt


The Recipe


(Make 2 Patty Melts)


1 Medium Onion (sliced)

1/4 cup Clarified Butter

1/2 teaspoon Salt (divided)

(2) 1/4 lb 100% Grassfed Beef Patties

1/4 teaspoon Black Pepper

1/2 teaspoon Garlic Powder

4 Slices of LFG Sweet Sorghum or Pumpernickel Sourdough Bread

2 Thick Slices a2 Cheese

2 Tbsp Avocado Mayonnaise

1 White Sweet Potato

1/2 Cup Rice Bran Oil (for frying)


Step 1: Caramelize Onions

In a sauté pan, heat clarified butter on medium heat. Add sliced onions. Season with 1/4 teaspoon salt. Caramelize the onions by stirring until they turn soft and brown. This will take about 5-8 minutes. Turn off heat and set aside


Step 2: Make Fries

Julienne slice the sweet potato with skin on. Heat oil to 325 degrees F in a medium saucepan. Drop in julienned sweet potatoes and fry until tender and golden brown (about 4 minutes). Drain on a paper towel and toss in coarse salt.


Step 3: Season Patties

Season both patties evenly with remaining salt, pepper and garlic powder.


Step 4: Grill Meat Patties

Preheat grill on medium high. I use an indoor grill/panini press. Grill burgers three to four minutes on each side. I like mine medium, and slightly pink inside (145°F).


Step 5: Toast and Mayo Bread

Toast each side of sourdough bread slices on the grill next to meat. Spread mayo on the two bottom slices and set on two plates,

ready to receive cheesy patties.


Step 6: Melt Cheese

To melt the cheese, you have two options. You could place the cheese slices directly on the grilled patties after the first flip. Or when you toast the top two pieces of bread, you could met the cheese directly on the top toasts. I opted for the latter, but either works.


Step 7: Assemble Patty Melts

Place each grilled patty onto the mayo toasts. Pile caramelized onions on top. Set the top toasts off to the side for open faced sandwiches.


Serve open-faced sandwiches with fries. ENJOY!
