Lectin Free Gourmet Goat Milk Fudge

Goat milk fudge is so rich and decadent. Start by making your own sweetened condensed goat milk. Then add 72% cacao chocolate chunks, grass-fed French butter, vanilla and walnuts. That's it! Just five ingredients and a very easy few steps, and you've got some of the best dark chocolate walnut fudge you'll ever taste.


The most time-consuming step of this recipe is making your own sugar-free sweetened condensed goat milk. There is nothing like it on the market, and you can't just open up a can of sweetened condensed milk. Way too much sugar!!!!

So just suck it up and make the sweetened condensed goat milk. It's so worth it.

The Recipe


LFG Goat Milk Fudge

2 C 72% Cacao Chocolate Chunks

1 1/4 C Sweetened Condensed Goat Milk*

1/4 C Butter

1 t Pure Vanilla Extract

1/2 C Chopped Walnuts


*Step 1: Make the Sweetened Condensed Goat Milk

In a medium saucepan heat 4 cups of goat milk with 1/3 cup Swerve granules. Whisk lightly until it comes to a boil. Find the fine line between boiling over and simmer. Medium heat worked for me. Stirring constantly, stir the sweetened goat milk for about 15 - 20 minutes until it is reduced to 2 cups. It should thicken and be syrupy and taste like sweetened condensed milk. A short cut would be to use powdered goat milk, Swerve, and half the water on the label to reconstitute. You only need 1 1/4 cup of it for this recipe, so save the rest for another recipe like spritz cookies.


Step 2: Mix the Fudge Ingredients

In a medium microwave bowl, add chocolate chunks, 1 1/4 cups sweetened condensed goat milk, and butter. Melt for about 1 minute on high. Take the mixture out and stir it. If it's thoroughly melted and mixes to a smooth consistency, it's ready. If you still have unmelted chocolate, then microwave for 30 seconds more. You could also do this in a double boiler to achieve the same result.


Step 3: Add Walnuts and Vanilla

Stir in the chopped nuts and vanilla extract until well incorporated.


Step 3: Pour Into Pan and Chill

Line a 9 x 5 bread pan with parchment. Pour the fudge mixture into the pan and place in the freezer for one hour or until set. Lift the parchment out and carefully peel the paper away from the fudge. With a sharp knife, cut into desired size fudge pieces. Wipe your knife after each cut for a nice square edges.
