I love baking with this dark chocolate Heart Defense powder because it not only tastes amazing, it has great health benefits. Before we get started, let's talk about green bananas. The reason green bananas are allowed on the Plant Paradox plan and yellow bananas are not has to do with sugar. A green banana isn't a special variety of banana. It's simply an unripe banana. Bananas are picked green and kept refrigerated on a truck. And when they reach the grocer, they stay refrigerated until ready to sell.
To make sure the bananas I pick are green enough, I usually ask my produce guy to bring out a cold box of bananas from the back. And then I select my green bananas from the cold box, rather than the produce stand. Green bananas are almost all starch. Once they hit the room temp, the starch begins to turn into sugar. So you don't want bananas that have been sitting on the produce stand very long. If you see a very green banana, feel it to see if it's still cold. If it is, that means it was just put out and it's okay to buy. If not ask for the cold ones.
Okay, now that we've had the green banana talk, let's make these delicious waffles.
The Recipe
LFG Devil's Food Waffles
1 Green Banana
1 Pastured Egg
1 Scoop GundryMD Heart Defense
1/4 Aluminum-free Baking Powder
LFG Easy Raspberry Sauce
1/4 C Frozen Organic Raspberries
1 T Lakanto Classic Monk Fruit Sweetener
Step 1: Blend Waffle Ingredients
In a blender, whip the green banana, egg, Heart Defense, and baking powder together until very smooth. With a rubber spatula, scrape the batter into a bowl.
Step 2: Cook the Waffles
Preheat your waffle iron. Spray the hot waffle iron with coconut, avocado, or olive oil, or rub with French butter. Spoon batter onto hot waffle iron cavity and close top. Waffles will be ready when your light indicates or when they quit steaming.
To make raspberry sauce, simply blend frozen raspberries and sweetener in a small food processor. Then strain to remove seeds.
Serve with raspberry sauce and whipped coconut or heavy cream and shaved 72% cacao chocolate bar. ENJOY!
