The Recipe
(Serves 6)
LFG Creamiest Pasta Salad
(1) 8 oz Box of Pieno Green Banana Rotini
2 Tbsp Sweet Onion (grated)
2 Celery Ribs (diced)
2/3 Cup Primal Kitchens Mayonnaise
1/4 teaspoon Pink Himalayan Salt
1/4 teaspoon Ground Pepper
1/4 teaspoon Garlic Powder
1 Tablespoon Distilled White Vinegar
1 Tablespoon Raw Local Honey
1 Tablespoon Fresh Parsley (chopped)
More Fresh Parsley for Garnish
Step 1: Boil Pasta
FILL a deep saucepan with water and bring to boil. POUR in pasta. BOIL for 4 minutes. DRAIN. RINSE with cold water. DUMP into a large bowl.
Step 2: Prepare Onions and Celery
PEEL a sweet onion. CUT OFF one end so you have a flat side to grate. With a box grater, coarsely GRATE enough onion to measure 2 tablespoons. DICE celery ribs . ADD grated onion and diced celery into the bowl with pasta.
Step 3: Make Secret Sauce
In a medium bowl, add mayonnaise, salt, pepper, garlic powder, vinegar, honey and chopped parsley. WHISK until very creamy.
Step 4: Fold in dressing and chill
SCRAPE dressing into the bowl with pasta. FOLD the dressing into the pasta until it's all nicely coated. COVER and CHILL for at least 4 hours or overnight. The longer the better as the flavors will intensify.
Before serving, be sure to garnish with fresh parsley. Take this pasta salad to your next barbecue and watch it disappear. ENJOY!
