French toast, two ways, is one of my recipe contributions to Dr. Gundry's Plant Paradox Family Cookbook. Get a sneak peek here plus a link to the book. Read more.
This easy French toast, with the maple syrup flavor baked in, is one of my recipe contributions to Dr. Gundry's Plant Paradox Family Cookbook. This recipe is a time saver because instead of frying individual French toast slices, you bake it all up in one pie glass.
If you have the book, great! This recipe is on page 94. You can make it with any lectin free bread you have, or make one of two amazing breads in the cookbook. My quick crusty baguette on page 185 or Dr. G's sturdy sandwich bread on page 164 both work great.
For this easy one-pan dish, just whip up the egg, butter, milk, sweetener, vanilla, cinnamon, and Lakanto Maple Flavored Syrup in a blender, then pour it over sliced or cubed bread, and bake.

The cookbook is, in my opinion, the best in Dr. G's Plant Paradox series because it explains lectins in a way that even a third grader can understand. Plus it contains 80 one-pot recipes that are super easy and delicious. Your whole family can get on this diet with you.
Get the book and ENJOY!
