If you're like me, you grew up with Bisquick as a pantry staple. As my mom would prepare her chicken and dumplings, I'd watch as she'd drop spoonsfuls of batter into simmering chicken and put the cover on the pot. A few minutes later, she'd lift the cover and to reveal risen dumplings that resembled flakey biscuits. They were so tasty and easy.
Now, as a lectin free eater, I strive to make the comfort foods I knew and loved. Sometimes you just need a hot plate of comfort after all those leafy greens and crucifers. With the right ingredients, you can make chicken and dumplings as good as you remember.
Are you ready, let's make lectin free chicken and dumplings.
The Recipe
LFG Chicken & Dumplings
1 Whole Pastured Chicken (butchered into 8 pieces)
3 Tbsp Olive Oil
3 Large Carrots (sliced)
3 Celery Ribs and Tops (sliced)
1 Red Onion (quarterd)
2 Garlic Cloves (minced)
2 Tbsp Grassfed Ghee
2 Tbsp Sweet Potato Starch
1/2 tsp Salt
1/2 tsp Pepper
2 Cups Broth (bone or vegetable)
1/4 Cup Organic Heavy Cream
1 tsp Fresh Rosemary (minced)
1/2 tsp Fresh Thyme (minced)
LFG Dumplings
1 Cup LFG Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt
1/3 Cup Organic Sour Cream
3-4 Tbsp A2 or Nut Milk
Instructions:
Step 1: Sear Chicken
In an enameled Dutch oven on medium heat, add olive oil. Lay chicken pieces in hot oil. Brown the skin. Add chopped vegetables and cook until color brightens. Remove seared chicken and veggies and set aside.
Step 2: Thicken Broth
Add ghee to hot pan. Whisk in starch, salt and pepper to form a roux. Pour in broth and cream and whisk until thicken. Put the seared chicken and veggies back into the pot. Add fresh herbs. Adjust salt to taste. Cover and simmer 30 minutes.
Step 2: Make Drop Dumplings
Whisk dry dumpling ingredients. Cut in sour cream to pea-sized crumbs. Stir in 3-4 tablespoons milk to form dough ball. Drop spoonfuls of dough into boiling pot. Cover and simmer 20 minutes.
To serve, plate dumplings, chicken and veggies then spoon thicken savory broth over the dish.
