Lectin Free Gourmet Hot Fudge

You know this hot fudge! But you didn't think it was possible to get this kind of thick, ooey, gooey, chewy hot fudge with lectin free ingredients.

No sugar, no corn syrup! Just dark organic chocolate and a little secret ingredient that gives the hot fudge its ice cream shoppe quality.

Okay, it's not really a secret. It's IMO syrup, which stands for isomaltoogliosaccharide, a prebiotic sweetener that looks a lot like corn syrup but it's great for your gut. It's made from the cassava plant. I like Vita Fiber. There are other brands. Just be sure to read up on the brand you choose to make sure it’s derived from the tapioca/cassava fiber and not corn.

If you choose, you can also use yacon syrup for a similar result. Yacon is a fructoogliosacchride syrup, with similar prebiotic benefits as IMO but slightly higher in sugar.

The Recipe

LFG Hot Fudge

2 T French Butter

2 T IMO Syrup or Yacon Syrup

2 T Brown Swerve

1 T Raw Local Honey

2 T Organic Heavy Cream

1/4 Cup 100% Cacao Chocolate Chips

2 Squares Trader Joe's 72% Cacao Dark Belgian Chocolate (Bar)

1/2 t Pure Vanilla Extract

Instructions:

Step 1: Melt Butter with Sweeteners

In a small saucepan on medium heat, melt butter with IMO syrup (or yacon syrup), brown erythritol, and honey. Bring to just boiling while whisking constantly.

Step 2: Add Cream and Chocolate

Reduce heat to low and whisk in cream. Turn off heat. Add chocolate chips and squares. Allow to melt for one minute, then whisk while adding vanilla. Whisk until very smooth.

For the ultimate LFG Hot Fudge Sundae, spoon this thick hot fudge sauce over compliant ice cream, top with organic heavy whipped cream and a brandy soaked black cherry. Sprinkle with cacao nibs. These are natures sprinkles!

The recipe makes enough for about four delicious sundaes. If you don't use it all now, put it in a jar with lid and store it in the fridge. Heat for 15 seconds in microwave or just melt in a saucepan over stove top to serve again.
