Deep Fat Fried Things Just Taste Better
I keep a deep fat fryer filled with pure olive oil on the kitchen counter for whenever the mood strikes. I use it to make Lectin Free Gourmet buffalo wings, pulled pastured pork, sweet potato fries and a lot more. Some people are programmed to think deep fat fried equals bad. Not necessarily. Frying is a good oil, like olive, at a low temperature (below the smoke point) is just fine. Good and varied fats are key!
I make my own Lectin Free Gourmet tortillas for street tacos and other various recipes. I thought I'd pimp up the recipe to taste more like Doritos. These are really my basic tortilla recipe with a few additions.
So I fired up the fryer, mixed up a batch of my grain-free tortillas and added millet meal for that "corn" crunch. I also mixed in classic taco seasonings like cumin, ancho chili powder, and garlic salt. Sure enough, the chips were a success, so I'm sharing how to make them as well as three yummy dips to go with them.
Switching Up the Mexican Classics
The jicama and green mango pico has a familiar but fresh face that makes you wonder "have we met?" But then when you taste this pico, you're like, no we haven't met and wow that's way better than I thought it was going to be. It has a lovely crunch and tartness and the radishes give it just the right pow.
The queso is very much like quesos you've had but without any of the bad stuff. The tomatoes are skinned and seeds removed, the starch is from a safe root, and the cheese is from a grass fed cow. So, you're welcome!
My four-ingredient guacamole is just comfort food to me. My kids devour it and it's just so healthy. Avocados are full of good lectins and good fat. And the fresh garlic and lime really shine through.

Chips and Three Dips Recipes
LFG Taco Chips
1 C LFG Flour Blend*
2 T Whole Millet
2 T Olive Oil
1/2 t Ancho Chili Powder
1/2 t Cumin
1/2 t Garlic Salt
1/4 t Cayenne
1 T Nutritional Yeast
1 t Xanthan Gum
1 t Baking Powder
1 Pasture-raised or Omega-3 Egg
2 t Apple Cider Vinegar
3 T Water
*2:1:1 Cassava, Coconut and Blanched Almond Flours
Jicama and Green Mango Pico
1/4 Cup Jicama
1/4 Cup Green Mango
1 Green Onion Sliced
1 Radish Chopped
1/8 Cup Cilantro
Juice of 1/2 Lime
Pinch Salt (to taste)
Lectin Free Gourmet Queso Blanco
1 C White Goat Cheddar Shredded
1 t French Butter
1 t Arrowroot Starch
1 Clove Garlic Minced
1/4 C Coconut Milk
1 Roma Tomato (don't worry, we will remove most of the lectins)
1 Green Onion Sliced
4-ingredient Lectin Free Gourmet Guacamole
4 Avocados
1 Clove Garlic
1 Lime
1/8 t Sea Salt
Instructions
Chips -- Heat your deep fat fryer filled with pure olive oil (not extra virgin) to 300 degrees. In a food processor with dough blade, blend all the ingredients until it forms a ball. Divide the ball into 8 equal pieces. Roll each piece into a ball and flatten with your palm between two sheets of plastic wrap. Roll out into a 6 inch diameter circle about 1/10 inch thin. Cut into 8 pie pieces. Drop 'em in the fryer for about 2-3 minutes or until lightly browned. Turn chips into a basket lined with a paper napkin or towel. Sprinkle with more seasoning and salt if desired.
Pico -- Dice jicama, mango and radishes and put into a medium bowl. Slice onions and add them. Chop the cilantro and add. Mix. Add a pinch of salt and let the mixture sweat for a few minutes. Squeeze the lime and pour the juice over the mixture. Stir and dump into medium dip bowl..
Queso -- First off, peel and seed the tomato. Then dice it. Mince the garlic. Slice the green onion. Melt the butter in a small sauce pan. Whisk in starch until smooth and bubbly. Add coconut milk and whisk until thick and creamy. Add cheese and whisk until melted. Add remaining ingredients and whisk until bubbly. Remove from heat and pour into a small dip bowl.
Guac -- Dice the avocados and put them into a medium bowl. Mince the garlic and add. Mix. Squeeze the lime and pour the juice over the mixture. Salt to taste. Scrape into a medium dip bowl and serve.
